Management of Food Safety
To be consistent with the Quality and Food Safety Policy, the plant has a Hazard Analysis and Critical Control Points system (HACCP) since 25/01/1999. In order to implement this system, the Sanitation Standard Operating Procedures (SSOP´s)were previously applied, as well as the Good Manufacturing Practices (GMP´s).

Bernal S.A company is certified in BRC Global Standard for Food Safety, Issue 7, Grade AA.

Personnel from SENASA (Food Safety; Health and Quality National Service) have an office in our plant.
The SENASA team is made up by inspectors and professionals who look after the maintenance of optimal working conditions as it is expected for this type of industries.

SENASA carries out the residues (hormons, pesticides, antibiotics, heavy metals), control plan on a daily basis, taking carcasses' samples to investigate the different residues defined by the National Plan of Residues Control (CREHA).

The application of the GMP´s, SSOP´sand HACCP systems is controlled and registered every day.
With the HACCP system, through the definition of Critical Control Points on the different steps in the process, the hazards that indicate a risk for the consumers' health are controlled, reduced or eliminated.

The system is verified by means of microbiological analysis of pathogens such asListeria monocytogenes, Salmonella sp, Escherichia coli O157:H7 and STEC No O157:H7, and other non- pathogen germs indicators of hygienic practices. The microbiological typing is also extended to the productive environment and to sources and networks of water distribution. The microbiological routine analyses are carried out in the plant lab. This lab is part of SENASA's official net, identified under N° LA 102. The laboratory is accredited according to the IRAM 301:2005, equivalent to ISO/IEC 17025:2005.
Quality control personnel take daily samples of end product, surfaces and workers' hands. These samples are submitted to Lab analysis in order to monitor processes and to take corrective actions if needed.
